A familiar name
I chose this knife because I have owned, used and trusted Swiss Army Knives for nearly 50 years as well as having some of their paring knives in the kitchen. This santoku is a well priced knife which has impressed me in the week or so I've been using it. It has enough weight to feel 'serious' with a comfortable handle to allow guidance, which is needed, given how sharp it is. It glides through even large root vegetables easily as well as making very short work of meat. In short, it's a joy to use and, while it may not be the kind of knife used by professional cooks/chefs, the domestic day-to-day work I'll use it for will be made much easier.
