Crafted using layered steel, the hammered finish of the back of the blade prevents your foodstuffs from adhering to the blade during preparation. The highly polished cutting edge has been sharpened and then polished using 3,000-grit whetstones, leaving an extremely keen edge.
The Samura Kaiju Santoku 7 is a traditional Japanese knife with classic blade geometry: a wide blade with a point sloping to the cutting edge.
This is a perfect substitute for the more familiar European Chef’s knife.
With a centre of gravity shifted forward, the Santoku knife performs all the extremely well, and provides great ergonomics: it can be used in a forward-and-back rocking-slicing motion or an up and down cut , with the point remaining in contact with the board all the time.
